Today, we have the co-owner of Mama Tig’s Pizza, Bob Davis. His other half, Jeanette, joined us in episode 12, so we get him today. We also have their daughter, Erin Bridges, who is the general manager for the Carleton Landing and the Eufaula locations. Welcome, Bob. Welcome, Erin, and thank you so much for joining us today.

Yes. Thank you, Amanda. Yes, and it's so good to meet you.
Amanda
I met Bob a little bit at Carleton Landing, but I haven't met you yet, Erin, so I'm excited wanted to meet you a little bit and hear more about everything. Mama Tig’s Pizza is a very, very special experience, part of the Carlton Landing experience we talked about in episode 12 about the type of experience customers can expect in regards to ordering, dining in, and menu offerings. We also learned in episode 20, the story behind the Mama Tig’s Pizza building, how it used to be the Fish Shack, I think it was. Then it became Mama Tig’s, and you guys have just cornered the market with pizza. We absolutely love it. To those who may not know, that very special building was demolished recently and is being built bigger and better. Bob and Erin, you guys can decide who answers this question, but can you tell us what is around the corner for Mama Tig’s in regards to the building?
Bob
Yes, the new building will offer indoor seating. We will still have the outdoor seating. The outdoor seating will not be screened in, but the indoor seating is all heated and air conditioned in there. It's going to allow us to extend our hours as far as the fall a little bit more and probably earlier in the spring. And perhaps be open a little more during the wintertime. They're all closed in, so it'll be nice. They'll seat probably, we're thinking around, 36 people, 32 to 36 people on the inside. Now, the outside will still have outdoor seating. There'll be picnic tables out there. We actually have a small deck that we'll have a table or two on, so they'll be seating for maybe 10 to 12 on that deck. But again, it won't be screened in out there. It's really nice. The back of it opens up to the festival lawn. So when we have music and events going on over there, that’ll be nice as well. Of course, we had the beer shack last year, so we now can sell to-go beer and wine from that beer shack, and we will also offer tap beer and wine on the inside.
Amanda
Did you change any regulations that allowed you to do that? Is it because of the new building or what has allowed you to make that change?
Bob
Yes, it makes it a little easier. With the laws in Oklahoma, we have to control points of entrance and exit with alcohol. So having this building the way it's situated, it's a little easier, or we feel like it's going to be a little easier to control the traffic. So in the past, previous to open the beer shack, you were able to bring your own beer and wine in, and that was perfectly welcome. Now that we are licensed to sell beer and wine, that is no longer an option. It must be purchased and consumed there or purchase it at the beer shack where it's a to-go container. You must leave the premises before open it, similar to what you would in a grocery or convenience store.
Amanda
You mentioned it will open up to the festival lawn. Do you mean part of the building will actually physically open up, or do you just mean the outdoor seating will face the festival lawn?
Bob
The outdoor seating will face the festival lawn and there is one gate. So, that gate is where you can come off the festival lawn, purchase a beverage and then go to the festival lawn and enjoy the beverage out there or anywhere outside the Mama Tig’s designated fenced-in area.
Amanda
You mentioned there will be a deck with 10-12 seats, but then how much seating will there be outdoor, do you think?
Bob
I anticipate there being 6-8 picnic tables like what we had in the past. So, it won’t really cut down on the outdoor seating. There will still be plenty of seating there.
Amanda
Yeah, that’s amazing. Super exciting. And what about the decoration style? I know Scissortail is building it. What is the design style of the building?
Erin
It is going to be really exciting about the new building. It’ll be very similar to the Eufaula location. It’s going to be open so our customers will be able to see the wood fired oven, which is really exciting. I know in town at the Eufuala pizzeria, customers really enjoy watching the wood burn as the pizzas cook. I think that’ll be really exciting for Carlton Landing to have that atmosphere. I believe that we’re sticking with a pretty modern rustic vibe out in Carlton Landing.
Bob
The dining area follows suit with Carlton Landing. There’s a lot of windows. When you’re sitting there in the dining area, you will have a view of Park Street, Water Street and the Festival lawn. With that said, most of the interior walls are glass, so there won’t be a lot of decoration or artwork hanging around. But the kitchen will be finished in stainless, so it’ll be all stainless steel walls back there. This show be a nice clean look, modern industrial type look like Erin was mentioning.
Amanda
I was just wondering on the outside, will it have the coastal design or is it- will it be white and really fit into the Carlton Landing look.
Bob
I can’t think of the name, but right now it’s the Snow White that you see out there quite often. I anticipate that color but it’s not painted yet. The building is pretty much constructed on the outside already. We’re finished up on the inside. It’s hopefully be done in another month or so. We’re all excited about it. It’s going to be a good look.
Erin
It does have a ramp on the outside leading into the building. It is handiciap accessible, which is exciting. Our previous building was not fit for that. We’re excited that it will have a ramp and and it is handicap accessible as well.
Amanda
That is exciting.
Erin
A couple of the menu options that we’re going to be adding out at Carlton Landing: We will be adding pies and cakes. We’ll be fresh pies and cakes out at Carlton Landing. We’ll have a bakery case out there, possibly some baked bread. That’ll be a new addition to the location as well as our craft beers.

And pasta

Can you tell us more about the pasta?
Bob
Have you tried our pasta in the Eufaula or Muskogee location? It will be the exact same. We’ll have the penne pasta. You’ll have your choice of red sauce, pesto or Alfredo. You can mix with any meats or vegetables you would like. And that’s usually served with garlic toast. Another option that we didn’t have out there. We’ve had that in the Muskogee, but we did not have room in the previous Mama Tig’s building in Carlton Landing. Also, we’ll have a larger selection of gelato. That’ll be nice. Like I mentioned, the beer and wine. We’re looking for great things out of it.
Amanda
Yeah, that’s exciting. About the pies, do you guys do pies already in the Eufaula and Muskogee locations?
Erin
This is a new thing that we’re adding. Once we get Carlton Landing up and going, we’ll offer it in town at the Eufaula location as well, and potentially in Muskogee will offer it as well. But it’s just something mom and I are going to do together to be able to offer that out at Carlton Landing. It’s fun.
Amanda
And Jeanette mentioned they will be homemade? Is that made by your hands or by someone else’s hands?
Erin
No, by mom and I. It’ll be a lot of work, but we’re really looking forward to it, and I think it’ll be a great addition to our menu.
Amanda
Can you pepper us with some ideas of maybe some pies coming our way?
Erin
Oh, yes. So, peanut butter cream cheese, pineapple crushed cream cheese pie, pecan pie, cherry pie, apple pie, lemon meringue and chocolate meringue. So, a lot of the pies are inspired by our family tree. They are grandmother’s recipes, great grandmother’s recipes and great great grandma’s recipes. My mom has been collecting them. And so, a lot of that’s inspired by our family tree.
Amanda
Okay, so that’s special. And so exciting. Well, I cannot wait to try the peanut butter cream cheese pie!
Erin
It is really good.
Bob
That will be our first. Did you just give one of those to the ladies here in town?
Erin
Yes. We have been- we’ve been practicing. We’ve had a lot of guinea pigs, customers in town. They’ve been loving us practicing making pies.
Amanda
Which one’s their favorite so far?
Erin
Probably the peanut butter chocolate chip one has been a crowd favorite, as well as the lemon meringue.
Amanda
Okay! All right. So, jumping around here, I was wondering if you can tell us more about the kitchen area. Is it doubling or tripling? Or how has it going to compare in size to the current kitchen at Carlton?
